The carefully deboned conger eel from Yukicho, Tokushima is served with a golden broth made from the grilled bones and a delicious broth made from the pouring stock.Place the skin side first in the soup stock and let it open up like a flower.It's ripe to eat.Put a few drops of sudachi on the conger eel and add a little plum paste before eating. The sweet onions and burdock from Awaji will dissolve into the broth, creating the ultimate soup stock.I recommend finishing off with rice porridge.
